The key in this style of beer is the balance of a firm body without excessive sweetness allowing the subtlety of the late hops to emerge. By using Washington State’s finest Cascade hops, known for their mellow bittering character, at the start of the boil, the solid contribution of bitterness builds gradually, like a conductor skilfully bringing in the cellos in a Weber overture, thus allowing that complexity to be revealed.
This beer is fermented slowly and held to gently condition at 2 degrees C for at least 6 weeks. This leads to a greater sense of harmony and balance. The overall impression is of a muscular full bodied pilsner maintaining an elegance and composure. Finish is bittersweet with a tantalising linger inviting another sip.
